That is a site with a lot of information which I find it hard to get to anything that says "Stake T&FH Consultant" - with the emphasis on "Stake". Got a link to a specific piece of information?

Very SIMPLE really ...
Just "Help" and "Assist" ... ANYWHERE ... you can, in your Stake ...
Unless, you are the "Stake, Temple and Family History, Consultant -- Family History Centre"; and, thus, the OLD (ie. former position of) 'Director' of the "Family History Centre" ...
THEN, it is just a matter of doing, WHAT you can, WHEREVER you can, in your Stake; and, of course, as DIRECTED or REQUESTED by the Priesthood Leaders of your Stake; plus, as REQUESTED by your Wards and Branches.
It could be ANYTHING ...
But ...
That said ...
We all have our own, strengths; and, weaknesses ...
All we can do is, use our strengths for the betterment of our Stake; and, work on our weaknesses ...
