Over 110 year old list?
Is there a way to get Family Tree to show a list of all of my family members born over 110 years ago, please? If there is already a feature like this, please can it be promoted? Everyone I ask does not know if there is.
If not, can someone try to set up this feature, please? With automatic updating so that we can identify when a person has come into that date range. It would be so helpful, especially if there's a lot of people in the tree(s) being worked on.

Short Answer: 'Yes'; but, NOT in "Family Tree" of 'FamilySearch'
There is ALREADY an EXTERNAL "Third Party" Application, that is 'certified' to work with "Family Tree" of 'FamilySearch', for what you desire.
It is called ... Eternal Reminder
And, if you use 'Google' "Chrome", there is a "Chrome" EXTENSION for "Eternal Reminder" that works with "Family Tree" of 'FamilySearch'.
Best of all, it is FREE.

I would have no use for that feature. I prefer to leave the death blank until I find a source.

As an aside ...
For Users/Patrons, who are Members of the Church, the reason WHY 'Jill' would like (ie. wants) such a Feature is very obvious.
Whereas, for Users/Patrons, who are not members of the Church; and, unaware of any of the tenets, of why Members of the Church, do Genealogy/Family History Work, then, such would NOT be obvious.
Hopefully, that EXTERNAL "Third Party" Application, that is 'certified' to work with "Family Tree" of 'FamilySearch', of "Eternal Reminder", that I proffered, will help - suit.

ps: Leaving ANY "Death" record BLANK is definitely NOT the problem/issue, the situation relates to those who were Born LESS than 110 Years ago.

My view is that because temple work matters so much, it is appropriate to put in the time and effort to find relevant historical records even if a person's birth date is (we think) 110+ years ago. I have also seen so many PIDs with conflations, unrelated persons' records mis-used to document birth and/or death dates, that may meet the letter of the 110 year rule but certainly violate the rule in spirit.

In the majority of cases, relating to "Temple" Work, the "Birth" is known and recorded; and, in many (but, not all) there are relevant "Sources" attached, that is NOT the problem/issue, in regard to the original question/idea.
I would humbly suggest, that the intent of the original question/idea, has been dealt with.
I would also humbly suggest that the intent of the original question/idea, has nothing to do with the "Quality" of the enormous amount of "Data" regarding the individuals/persons in the "Family Tree" of 'FamilySearch'.
I would further humbly suggest that the original question/idea, could be ignored by Users/Patrons, who are not Members of the Church; as, the original question/idea really relates to "Temple" Work.
Just my thoughts.

I agree that thoroughly researching individuals is of great importance to support accurate records for that person.
My question was best answered with the Eternal Reminder information for this particular idea.
