Thank you for your question about Egypt and Turkey.
One suggestion is to go to the Wiki in FamilySearch, click on the map, choose one of these countries and look to see what is available.
I did this with Turkey and found a few good sources of information including online community of other researchers. Here is the link to that page. There is a similar one for Egypt.

In addition to MDR MT's suggestion and URL about Turkey, we found a similar one about Egypt, with a note saying other genealogical sites can be accessed at Family History Centers or the Famiily History Library. View the link: https://www.familysearch.org/wiki/en/Egypt_Online_Genealogy_Records
