Where can my Stake President get the numbers for FamilySearch participation from our Stake ?

Have him login to his ChurchofJesusChrist.org account. Select "Leader and Clerk Resources". Then select "Reports". Then select "Family History Activity Report". He will see the complete totals for the stake and then at the bottom of the report he will see the submitter detail by ward.

I have viewed temple and family history reports for my ward and for the stake as my calling is a Stake consultant and in meetings the Stake leader has shared the report. Stake can see all the ward reports. No Names are used as far as seeing who did what. You see X number of people submitted a name, or indexed but not who those people are. You should ask your ward TFH leader or any bishopbric member can access the report. It should not be secret but be used as a tool to see where the ward or stake needs to teach others (few people indexing maybe a class would help)
A couple years ago the stake president asked the church for a more detailed report (he is a numbers guy) and was told something to the affect -- that you do not get a report on who prayed each night, and temple worship is private and you will not get a report on who attended or what they did for temple work.

The Family History Activity Report is the same for whomever views it. There is not a report that contains the names of the members of the ward or stake who are participating in temple or family history work. That information is not available to anyone.
It is considered personal worship and is not to be tracked.
“Like partaking of the sacrament, attending meetings, reading the scriptures, and saying personal prayers, doing family history and temple work should be a regular part of our personal worship.” – Elder Allan F. Packer, The Book, October 2014, General Conference.

So, what submitter details can he see about me specifically as a member of his stake?

Yes, I've seen the Stake Temple and Family History Report, and know what it has - Percentage of individuals who have completed 4 generations, number who have logged in to Family Search during the year (and past two), and number who have submitted a name to the temple during the year (and past two). Also, percentage of total ward and stake membership participating in family history and a breakout by age groups as a stake and broken out by wards.
I understand that there are other reports that Stake consultants do not always get, including an indexing report that at one time had the names of those who were doing indexing work and lists of those with current temple recommends and when they expire. I am wondering if the stake president gets a more comprehensive report on temple and family history work than his high counselor, stake RS president, and other stake leaders, and if so, whether he is aware of it and what is on it. I have found that sometimes our leaders forget what reports they can see if they don't look at them.
