the merge process will allow you to control what gets include in the merge.
the Help Center - has a lot of great articles about merging:

It is best to move any spouse(s) and children across, even if they do not appear to be connected with the individual who will remain after the merge. After the merge is completed you can detach any incorrect relationships and also merge any spouse / child that is then found to be duplicated.

By default, any relationships will be merged but FS has set it up so that you can undo that default if you want. I believe that this was mistake made by them for many reasons that I won't go into right now.
But if you need to remove relationships during a merge, they should be done PRIOR to the move because this will likely reveal that the two records you are merging are NOT really the same person.
For the normal vitals-like data you will have the choice to pick the data from either of the PID records being merged. Note that sometimes you need to go to the surviving PID afterwards and make further adjustments when neither of the original PID's data were exactly correct or you wanted information from both of them.
