Please confirm whether you are referring to amending a name in Family Tree or one from a FamilySearch records collection.
If you are talking about the former, you go to the Vitals section and click on "Edit", next to Name. The cursor should already be flashing in the First Names box, so hit the space bar, add the middle name (and a reason statement, if you wish), then click on "Save".

So as Paul points out, a name like "John Allen Smith" would have "John Allen" in the First Name field and "Smith" in the Surname Field. The same thing can be done with a middle initial.
Note that frequently people end up going by their middle name instead of their full name. In this case you could ALSO go to the Other Information section of the person's details page and create an Alternate Name with "Allen" in the First Name field and "Smith" in the Surname field.
It used to be that when involved in searches, and when used by the hints engine, the Alternate Names are used in addition to the main Name fields. I am assuming that this is the same.
