Living people disappear from my family search account.

Living people in the massive tree can only be seen by those who have created the person's record. If you create a record for your husband's parents, only you will be able to see it.
FamilySearch FamilyTree, despite some claims to the contrary, and because of privacy laws not only where you live, but world-wide, is not ideal for recording living persons.
You may want to work with a tree on Ancestry, because you can share the tree with others, including the ability to edit the tree and that includes living persons. The person desiring access has to ask you for that access (and have an account with Ancestry), which you then grant to the other person. Note, it has been several years since I've done this, so the process may now be different.
Another option is to use a personal family tree management program, such as those located in the solutions gallery. The three fully certified (to work with FamilySearch FamilyTree) programs have free versions that will work for a lot of people (Ancestral Quest, Legacy, and Roots Magic). Because they feature free versions, you can given them a try to see which one you like the best. There are ways to share a tree over the internet through drop boxes, and so on. The three programs have user forums where you can ask about a method that would work for you and your family.0 -

That would mean that a lot more than 2 records all disappeared at the same time.
Try doing a "Find" in the familyTree for your husband's grandparents and try tracing back toward you from them. If someone put a Deceased version of those records in the tree, there might be some kind of issue there.0 -
