Not all DGS are available in Full Text Search. It's still in the experimental stage, and there is a dedicated group for feedback and questions. From the header in that group:
FamilySearch has billions of historical records that have been digitized, but only a portion of these record images are currently searchable.

Thank you. I have bookmarked the feedback group because I am spending a lot of time learning to use Full Text Search (FTS), and trying to find some dead ends. Is there a way to tell whether a DGS number is searchable on FTS before trying it.

You'll want to ask questions in the group. I'm not staff or a mod.

I have tried it on images that showed up on that very day, and it worked. So it leaves me wondering how the process works.

Again, you'll want to ask for more information in the dedicated group.

I just watched a webinar on using full-text search. During the presentation it was mentioned that more results are available at a familysearch center than for us at home. Will those records available only at the centers ever be available for us at home?

@shermin FamilySearch must abide by the contracts with the original record holders/creators. If the records are restricted to view at an FSC or an affiliate library by the wording of the contract, they cannot be viewed at home. Contracts do sometimes change over time.
