I am guessing that is a "system generated link"
and not a user added tag
Im guessing it may be based on birth and death dates
or a specific link to a military record.
First time I have seen it.
Here is a web page that can be helpful for military info.

.
Regarding that "War of 1812" in the "Top" 'Right-Hand-Corner" of the "Person/Details" page/screen" ...
.
It IS NOT a "Tag" ...
.
That IS what is known as a "Label" ...
.
You "Add" a "Label" to an individual/person from the "Tools" Section (ie. feature/function/facility) on the 'Left-Hand-Side' of the "Person/Details" page/screen" ...
.
.
"Labels" were formerly known as "Badges".
.
"Badges" predominantly original related to the "Early Utah Mormon Pioneers ( 1847-1868 )"; and, then, was expanded to include the "War of 1812".
.
"Badges" where redefined as "Labels".
.
Then onwards, "Labels" expanded from the "Early Utah Mormon Pioneers ( 1847-1868 )" and the "War of 1812"; and, proliferated ...
.
"Labels" identify that a individual/person in "Family Tree" of "FamilySearch", was part of a well-known group; and/or, participated in a historical event.
.
You can "Add" any of predefined "Labels" to your Ancestors, they can have more than one.
.
I hope that helps,
.

I see the options there but how does one get to the page that lists all the other folks with that tag??

you are assuming there is such a page . . .

.
The way to see a "List" of those who have a particular "Label" attached to them, is to do what you have already done ...
.
That is, to select that "Label" (in this case, "War of 1812") on the "Person/Details" page/screen ...
.
For example, for "(Colonel) Isaac Moses JOHNSON" ( 11 April 1780 [On Tombstone], Frederick, Virginia, United States of America – 25 June 1867 [On Tombstone], Cahaba Valley, Shelby, Alabama, United States of America ) being 'FamilySearch Person Identifier': KGYC-6XC, there are some 7605 individuals/persons in "Family Tree" of "FamilySearch" with that "Label" ("War of 1812") attached ...

Right...I realize I can see it that way @Brett . but I’m wondering if there is another way... I’ve never seen those labels before, and I’d like to see who is attached to other labels listed and what the page looks like ... how do i search for someone who has a particular label attached to them?

.
Basically, as far as I am aware, you cannot.
.
That is, unless you find an individual/person with "Label(s)" added.
.
I do not think that there is an easy access place to view the various "Lists" of the various "Labels".
.
Well, not for us 'mere mortals', sorry, us Users/Patrons.
.
Certainly not from the "Tools" Section (ie. feature/function/facility) on the 'Left-Hand-Side' of the "Person/Details" page/screen"; and, I have not seem anything anywhere ...

apparently not - or you two would have found it :-)
but actually there is way I could build a page - or even a Community Post - that could act as the page that you are looking for .
something for me to work on this afternoon

Also.... the “label” seems to be missing from that person now ? I thought the labeling option was a great idea ... did FS remove it altogether? I dont see the option to add a label to anyone either

I believe they removed the option
I think it was causing too many issues. - there was no real control of who was included and who was not.

BTW - can you message me privately - I wanted to ask a favor of you.
