I have run across instances of names of 2 different persons indexed together. For instance: Baker, Jane Thompson, Jack

Indexed as Jane Thompson. You lose part of both names if they are accepted as AI indexed them.

Are you referring to Full Name Review or Quick Name Review?

In Quick Name Review, all the names will also go through Full Name Review. And this is where errors like this will be corrected. This help article might help you understand quick name review better: https://www.familysearch.org/en/help/helpcenter/article/how-do-i-review-names-on-get-involved

In Full Name Review, the highlighting can be adjusted to reflect the two different names. You can read about how to adjust the highlighting and add names in this help article: https://www.familysearch.org/en/help/helpcenter/article/help-with-full-name-review

Does this help answer your question?

When I try to do this it deletes the other names highlights. I noticed that I have to create a new highlight every time I detach it. I am worried about the full names that I have detached from combined records! Has anyone else noticed this?

I have had the same problem with two names. It doesn't allow you to put in the second name without the first one disappearing. I have just started doing the one that was best represented by the highlight.
