Things that are obvious to someone actually attending the conference (whether in person or online), but missing from the web/app, makes you sometimes wonder if the developers have ever attended one themselves....
There is now a "Watched" page that shows any session that you clicked "play" on. I am not sure when this feature appeared, as it does not have sessions that I have watched from previous years. However, a session that appears on the Watched page does not get removed from any playlist.
If you really want to keep track of what you have already watched (and what you liked and/or what you want to refer back to), and also maintain a list of what you haven't watched, you will need to do a bit of extra work. I would suggest you take advantage of the feature that now lets you create multiple playlists. Once you have watched a session, don't just rely on it showing up in the basic "Watched" list. Make your own lists (and name it "Watched - Scandinavian research" or whatever) and then move the session you have watched to one of your own "watched" playlists. Then remove that session from your list of unwatched sessions. You can add a session to a different playlist from the playlist button on the session page. Unfortunately, you cannot remove a session from a list while on the session page; you have to go to the session's entry on the playlist page. (I warned you it would be extra work!)
Of course, it would be very helpful to have the same filtering and searching capabilities for your playlists as you do in the main catalog of sessions. If you're anything like me, you have can dozens of sessions in a playlist. Better yet, the general search needs to to have a filter that let's you filter out sessions in or not in a playlist, and ignore sessions you have already seen, as well as mark the sessions in the search results with some indication that you have already seen it.
