Hint queue
I am happy to help by attaching documents to profiles of people distantly related to me, having that number ALWAYS as 400 people, no matter how many I attach, makes me feel a bit like Sisyphus constantly rolling a boulder uphill.
How about knocking the size down to ~100 to attach and do not “refill” the queue until it reaches 25 or something so I can get a sense of accomplishment? Or at the very least, have a number showing how many I have completed?

Unlike Sisyphus, you're not tackling the exact same task each day -- you're attaching different records each time. However, attaching record hints is not something to "get done"; as you attach hints for people closely related to you, FamilySearch will keep expanding the scope of its search to still find you record hints among more distantly related people.
So I'd recommend that you stop trying to reduce the length of the hint list (that would be a Sisyphean task!) and just help out by attaching as many records hints as you'd like to on any given day.
The good news about your request to see how many sources you have attached is that you can see that anytime under "My Contributions" on the Family Tree menu.

One good thing about not adding living persons to Family Tree is that one avoids getting any of these hints. In fact, I only usually find myself on my "Home" page by accident, as for me, there is nothing useful there to be found.
I prefer to decide my own priorities rather than having recommended tasks, including these hints. One thing to remember is that no FamilySearch algorithm will ever be able to produce all those sources on the website that are ready and available to be attached. For some users, there are many, many more to be found in the unindexed "Image" collections, which are usually far more useful than an indexed record without a linked image.
For those who are presented with an overwhelming amount of these hints I would suggest you try to ignore them. Providing you have you have "Record Hints" turned on in Family Tree you can see them (indexed records for those in your family branches) from your tree views - particularly Landscape - very clearly.
I find there is such a thing as FamilySearch (and other websites) being "too helpful" and get more satisfaction in spending my time wading through original material, in a hope of finding records of events that have remained elusive for many years.

I generally have 44 hints on my FS home page. The count is 42 today as I cleared a couple yesterday after reading this post.
I normally don't work through lists of hints. I tend to concentrate on an individual or a small family group. That suits my work style.
FWIW Ancestry removed the number of pending hints from the leaf on the subscribers' home pages because of reports of frustration with the large numbers. That also never bothered me.
