Welcome to the FamilySearch Family Tree. There is an extensive Help Center, with articles giving step-by-step instructions for almost any process you can imagine. For example: How do I correct parent-child relationships in Family Tree? may help you sort the issues you mentioned.

At the risk of re-inventing the wheel that Áine already pointed out...
First, a basic underlying principle that may help explain some of the FS Family Tree's behaviors: it is a single, shared, collaborative, open-edit tree.
The collaborative setup means that all changes are tracked, and very few things can be deleted. This prevents other people from making your contributions disappear. (Which, of course, means that you can't make their contributions disappear, either.)
You can fix errors whether you caused them or merely discovered them. If it's not purely your work, then you can't delete, but that just means that if a relationship is incorrect, you don't change the people, you fix the relationship. Follow the link that Áine gave for instructions on fixing parent-child relationships; for incorrect spouses, scroll down to the Related Articles list at the bottom of those instructions and check out the article on "wrong spouse".
