In trying to create a portraits from photographs of individuals, in many cases, the "automatic centering and size adjustment" that the familysearch software performs makes the image of the face too big to fit the portrait circle. Using the "-" button does not help, as the image pops back to a size too big after releasing the button.

I agree. For the most part, the new program works very well. The Memories section could use some tweaking. Formerly, to adjust a picture on the person page (from a belt buckle to a face), you simply tapped the circle and chose what you wanted to do. Now, tapping the picture takes you to all the Memories, & you have to search for the "belt buckle". when you find it and center the face and save it...the face is turned sideways, or you get a shoulder, and is nothing like what you saved.
