This is a good idea. Ancestry sort of does this, enough that it is slightly helpful. Your search results there will show if you've previously viewed an item (going back 3 months, I think), or that an item is already in hints or already an attached source.
When I am "full on" researching a person or family, even what Ancestry offers is not enough. I end up keeping a spreadsheet with links, citations, dates, names, places and my comments saying what is pertinent or questionable or not applicable. Occasionally I add images I have or have found online, but only if the image itself contains genealogical clues. Example: I have 2 photos of different ancestors near large institutional buildings. Google maps helped me identify where those photos were taken and both were surprise locations.
I would change your statement that "it is a challenge to keep track of the resources I have looked at" to read something like "it is a challenge to keep track of the resources I have looked at and the evidence that each implies."
