Sources linked to a person are not showing as Added sources in Family Search Profile as of today
Sources page in Family Search shows it is linked to a person, but when you go to that person's Sources page, it is showing as a 'link' to be added
As an example https://www.familysearch.org/tree/person/sources/K4X9-JFL is the Sources page for Wilber Root, which only shows an 1880 Census linked to it and 6 other 'links' that could be added to him. Selecting any of the links, such as https://www.familysearch.org/ark:/61903/1:1:MS4K-67Y show the 1900 Census Source page. On the right, it shows that it is already linked to Wilbur Stowell Root with ID K4X9-JFL which matches above.
This has only been seen, I think, since updates were done last night.

To fully clarify what you were seeing:
The globe in the first column means that the source is a user created source, not a FamillySearch system source. A user has typed in, or not, every bit of information in the source.
The +ADD is shorthand for "the user creating this source did not put a 'date of the event' on the source, please add one." (Someone has been cleaning up this source page and adding dates, that is why you originally saw +ADD in the Date column for every source, Julia's image shows only one, and now there are none.) It does not mean "Add this source to this person."
The link in the next column is the title of the source. It is just text the creator of the source typed in and is not a clickable link. (Here again someone has been working on the page and given all the sources more useful titles)
The date in the last column is the date the source was added to the page. It is not the date the source was last edited. Sources do actually each have their own change log. To get to it, click on the title to open the detail view of the source. Towards the bottom you will see the date the source was last edited, who edited it, and a link that says "See Changes":
For this source, clicking SEE CHANGES shows:
where you can see that one user created the source September 20, 2021 and when creating it put just a title and the URL of the source. Then two days ago a different user changed the title and added the date.
It is a little bit confusing to read this change log because apparently the source is originally created as a completely blank object and adding information is viewed as a change from blank to containing something rather than adding something.

I think you're misunderstanding what you're seeing. Wilbur has seven sources on his profile. The first one is the 1880 census, which has an "unfinished attachments" notice because of their hired hand; the rest are fully attached to everyone that the index knows about.
(The last one is Wilbur mentioned in his son's marriage record; dunno why the title was edited to be so uninformative.)
Nothing has changed and nothing is wrong.

Although it does appear the sources - all attached by a single contributor on the same day in 2021 - were attached in a non-standard process.

When I posted this question, ALL of the links looked like the last one, with only the 'ARK' link and no title. Only the 1880 census had a title being shown.
When I have seen items in the lower section with an 'Add', it had the title of each item, not a link without a title.
Possibly the person that added them in 2021 added them as that link, but it is the first I have seen it like that.
