Indexing land records with Grantors & Grantees:

Do I index the name of the Guardian (when given) or the name of child/infant for whom the Guardian acts? Usually only the surname of infants is given but a full name of Guardian.

You will only index the name of the child. This is in the Field Help for the Statewide Index, but it is applicable to other New York indexes. Note that "deceased" also applies to (at the time) the living.
When applicable, index the deceased indicated in the "Grantor" column. Do not index the deceased's executor, trustee, attorney, and so forth.
"So forth" does include guardians. Without seeing your batch, if the entry is Given Name <Blank> Surname Smith with John Smith, Guardian, you will index it as Given Name <Blank>, Surname Smith. However, if the entry is John Smith, Guardian, you will index it as Given Name John, Surname Smith since he is the only name listed.
