Edit needed is not give in the Edit Screen.
I have opened this Census of 1885 Hartford, Todd, Minnesota, Territorial and State Census. It says that the family's ethnicity is Canadian. But they are from Prussia and no where on the Census is anything Canadian. It also only allows me to Edit the Names.
How do I fix something if it is not in the edit options?

If you get someone to help you, let them know the whole family needs fixing. They are all of "Canadian" ethnicity, yet born in Prussia. It is clearly a transcription error.

It probably actually isn't an indexing or transcription error, since the document doesn't say anything about ethnicity. (Place of origin or birth is not the same thing.) "Canadian" was probably added by a post-processing step at some point; you can tell that this index has been well-massaged by bots, given how everyone's age is listed four ways etc.
Whatever the source of the error, however, what you can do is to ignore it, just like how you ignore the duplication of all of those other fields. The index is not the data; it is merely a finding aid for the data. It has demonstrably served its purpose, given that you're pointing out a discrepancy with the actual data.
