Death Records 1860 Virginia - Owner named but not the deceased M3R5-QPF
In this batch, the owner's name is recorded instead of the enslaved person who was the deceased. My plan is to enter the remaining information for each person but to enter "Blank" for the deceased's given name and surname. Is this correct?
Personal note: This record makes me very sad. The enslaved person's name will never be acknowledged. (even if it wasn't their real name.) :(

I would agree that what you are doing is correct. The instructions for this project state:
- If a record does not include a name for the primary person, you should still index the record, marking the primary name fields blank and indexing other names, such as names of the parents, along with any other fields that are present on the record.

@JaniceAllen57 it's a very sad part of history. Oftentimes in the pre-Emancipation south, the Census would have a Slave Schedule that would only list the owner and age, color and gender of the slaves he/her owned.
You can search slave schedules here: https://www.familysearch.org/search/collection/1420440 My advice would search the state and leave everything else blank.
