I Broke the Surname field

I am posting this here instead of feedback so that I can share a screen print.

When I started this page, the Surname for the highlighted family was WHITE. It is now unavailable, and I wanted to document the procedure I followed to break the family.
Originally the TOWE and WHITE family was one household. I deselected the WHITES and processed the TOWE family.
When I finished, the cursor popped down to the blank line BELOW the WHITE family, and so naturally I said it was NOT A PERSON, which is what I normally do when I get those blank lines, but then the WHITE family lost its surname, with the field unavailable and the entire list of WHITE - Blank went away.
