The project instructions tell me that I am supposed to index all applications and indexes for graves and cremations, and to mark all other records as no extractable data.

I'm curious about this batch then: https://www.familysearch.org/indexing/batch/b714f0c9-8702-4665-94c5-11f0c3b933e6 As it is an application for a grave marker/memorial, should it be indexed? Or not?

It should be indexed. When you click on the example for How to Index a Grave Application, it is the same form.
