Recording Places for UK—Principal Probate Registry, 1858–1957 [Part O]
The instructions for this indexing project do not say what to do about multiple places. Do we index all places separated by commas?
Batch: [M9B3-D7Z]
Example: Elizabeth (18 November) has three counties listed ... Middlesex, Northampton, Stafford. Do I list them all in the County field?

As far as I can see, there is no need to record the residences of the executors. The records only need the residence place of the deceased.
- The fields initially ask for probate year/ day/ month.
- Deceased Surname*/ first name*/ residence place* (*If multiple details are given in these use 'Or')
- Death day/ month/ year
- Court (usually just type the second bolded name here, if Principal Registry enter <BLANK>)
- County (usually will be <BLANK> but in some cases, they record county instead of court name - I haven't come across any yet)
So in your example Court: Peterborough; County: <BLANK>
Hope that helps.

I was hoping someone who works on this project or a moderator would answer. Since it is now June 2nd, it doesn't look like that is going to happen.
Looking at that record, it seems that those three counties are only the places where the executors reside. I would ignore them. Her will was proved at Peterborough, so that is the court. It then goes on to list the three executors residences (Middleton, Northampton, Stafford). That information wouldn't matter to this entry.
I bet there aren't going to be very many of these records that a county name will ever be entered since the instructions say "in some cases a county name was recorded in place of the court name. When this occurs, please type the county name in the County field. Do not index the residence county in the County field." Since it is "some cases", it is probably a few cases.
