When transcribing headstone inscriptions you only enter in the fields information requested.
We do not assume dates or correct spellings

If sons and daughters are listed on headstone, [ and listed as son or daughter] are their surnames entered even though the names ,except for their father, are not on the headstone.
There is no instruction for this. I have looked it up many ways.

Hi @Diane SHAW_1 I didn't know Family Search had any indexing projects involving Headstone Transcribing, if so can you provide a snip or screenshot, I'd sure be interested.
If the child's name is on the headstone, I think you might add the Given Name as an additional entry but you would not index any other info like Surname or even DOB or Death Date unless the headstone has something like Jane 1980-1990 - this would indicate a 2nd burial at the same cemetery.
On the research family history side of things, I'd try FS Search Records on the Father & Mother Surnames with dates to see what additional birth/death records I could find then I'd email my sister who is an experienced genealogist/family historian - email me if you'd like. 😎

They never give enough help information on some of these transcriptions. These are from Lancashire UK.
I am just going to copy it down exactly as the headstone says. Everyone seems to do it differently so perhaps if they get enough queries about it, someone will come up with the answer.
