That is a Very "Good" 'Question' ...
As far as I can ascertain ...
The is NO indication, in 'FamilySearch', as to how many "Memories", that an "Album", can hold/contain.
And, I have 'looked' through a number of "Knowledge Articles".
eg.

you should not load more than 1000 items to an ALBUM
you can technically load more (nothing prevents you) - but if you do, such items will not display and you will have items in the album you cannot see.
also . . .
There is no real limit to the number of albums
and there is no real limit to the number of total items in the gallery.
though once you get above like 10,000 items in your gallery you start to see real performance issues
and once you go above like 20,000 items in your gallery -- you run the risk of crashing your browser or ultimately having issues that may prevent you from accessing your uploads.

. . . though I note you worded your question
"how many pages can an album hold"
I assumed you meant "items" (photos, pdf etc.) in your album. (the answer to which is 1,000)
and I assume you really were not asking for example "How many pages can be in a pdf file you upload."
(the use of the word "pages" was a bit confusing/ambiguous)
