why would a woman use a different last name on the Catholic Baptismal Records

Fathers name was Frederic Moon and the mother's name on 8 children in the Catholic parish baptisms was Mary Louise Norton. In the GRO the mothers name is recorded as Mary Louise de Bruyne. It was de Bruyne in the marriage record as well. The mother is from Belgium. have ordered the original marriage certificate to see if I can shed any light on this.

Any one have any idea why the mother would use a different last name on the Catholic registers.

Maybe 2nd marriage? (Not likely but that's the first thought)

Or maybe Norton is a place instead of last name (sometimes parish record columns might not identify very well)?

Or even more remote possibility - perhaps she was adopted/legal guardianship by Norton (not likely after marriage - or perhaps her widow mother 2nd marriage Norton)?

Another remote possibility - two Frederic Moon (father and son?) both married separate 'Mary Louise' (if this were the case the 8 children birth dates might have a large span or overlap)?

Maybe the priest recording/copying got mixed up and wrote the wrong name?
