Here is guidance on this issue from the Indexing Help Center. It's not very encouraging @Alida Moulton . Projects we love come and go. I hope you see more El Salvador projects soon:
What are the upcoming indexing projects?

Information about upcoming collections is not made available prior to publication due to various factors that can affect the publication time line, such as agreements with genealogical societies about the indexing of their records, final assembly considerations, space on the servers, geographic considerations, and so forth.
Regretfully, we cannot accommodate requests from indexers to be given specific projects, localities, batches, or records to index. Indexers can select a project that interests them or matches their particular abilities, such as skill, language, or type of record.
For a list of currently active indexing programs, please visit our indexing projects page.

Hello Alida. I think you must be trying to choose projects by clicking on the Indexing tab and then Find A Project, then Central America on the Map which currently only brings up projects in Mexico, Guatemala, and Honduras. There should be a big red box on that page that says to click on Web-Indexing to search for ALL the projects that are available.
So, instead of clicking on Find A Project, click on the Web-Indexing tab. Then you will be taken to the screen that shows your progress and will allow you to choose from many projects. Click Find a Project there, and you can Refine your Results. You can choose any language you wish to index from or "all". When I have All Languages selected for projects, there are 140 which I could choose from, for English I have 49, and for Español, there are 10.
Good luck and let me know if this works for you.
Happy Indexing and good work on those El Salvadoran records!

There sort of still is one El Salvador project, but I think it's within minutes of being done:
El Salvador—Registro Civil, 1836–2001 [Parte J]
Spanish Intermediate Project, Checkout Limit: 2
Indexed 99%
Reviewed 99%
Help Review: 5 batches need review
---
The "Index" button is grayed out on it, which I interpret as "there are no indexing batches left, unless a reviewer sends one back".

That's a bit odd. I guess it comes and goes in the list as a review or indexing batch is or isn't available.

It is true that projects "come and go" towards the end of the project.
