Remember that Family Tree is one large tree (even though not everything is connected yet). So there is no significance in who you start with. If you start with yourself, you can then add your wife and then continue by adding your wife's ancestors whilst not adding your own.
You say that you would like your wife "at the centre" but at the centre of what? Landscape and portrait view show both of you initially. The fan chart view shows you initially but if you move your mouse down slowly from you towards your wife, a grey crescent will appear that you can click on to switch the fan chart view to that person.

@brianmiller1946, on the web interface you can set any person ID as your Family Tree Starting Person, meaning the default person that appears at the root of your Family Tree. That feature is in your account settings. Set it to your wife's PID; then your personal Tree page will always show your wife at the root.
I like to set the starting person to a convenient PID in whatever part of the tree I happen to be working on.

Hi Brian Welcome to family search community and thanks for posting your question. We know it can be a little challenging when first starting your tree. As you are finding out, Family Tree allows you to add to your tree while viewing the tree but you can't make changes. When you add someone to your tree, you are creating a person page for that person plus by virtue of where you place it on the tree, some relationships. In order to make changes, you need to go to the person page. In fact, many would recommend that you always make additions to the tree or changes from a person page.
Having said that, you go to a person page by clicking on the name of an individual on the tree. In your case, click on your name. This will displays a summary card of your record. At the bottom of the card, click on person to display your person page.
The person page contains all the information known about a person including vitals and relationships. You will see your name at the top and underneath that will be a several tabs starting on the left with "Details" Make sure you have "Details" selected. Now you can review and edit your vital information, other information, and in the family members section at the bottom you can review and edit your relationships. It sounds like you added your wife's mother as your mother. It that is the case, you can change that here. You will see an "edit" prompt by many of the items on the person page. Just select "edit", make the changes needed and save. In the case of relationships in the family members section, there is an icon used to edit relationships. In your case, you will see a little box with a pencil in it to right of your name where you show as a child of Marjory Twist. If that relationship is not correct, then click on the Icon and edit the relationship.
As mentioned above, many find it better to make all additions and corrections on a person page rather than the tree view. So in your case, while you are on your person page, you can add or change any information. You could add your spouse, children, and parents. Once you have done that, you could go to your wife's person page and add/edit any information and add her parents. And you can continue to do this, generation by generation. As you add deceased ancestors, family search will let you know if there are already possible records for that ancestor. If you find a match, family search will add that record plus all the genealogy already connected to that record. You can select to view your tree at any time recognizing that the tree is just a reflection of what you have entered on the person pages. If you see something wrong on the tree, it is because there is something wrong on a person page.

"As once I add a person I cannot delete them or change them."
This is not strictly true. If you have added a person and no other user has touched the record, you can delete that person without any trouble at all whether living or deceased.
What you cannot do is delete a person that anyone else has edited and you cannot delete yourself.
I'm not sure from your post how you started your tree, but be careful: The inital person should always be the owner of the account.
Do not change your actual root person under your account to your wife. You are asking for all sorts of future problems. As pointed out above, after you have entered yourself and your wife, you can set your wife as "Family Tree Starting Person" under your settings.
