Past work
I have not done any new genealogical entries in a while. This past month I took a family trip to an area that my direct ancestors from 6 and 7 generations back. I found their graves from 3 different generations and took pictures. Excitedly, when I got home, I wanted to add the photos to my family tree. All my work for over 10 generations is all gone! Im so glad that I save it on paper, too, otherwise i would have lost everything. Upon talking with others, i also found that someone can just change all your information without your permission. Im very disappointed. All my stories, pictures, all gone. I have to start entries all over again.

Other people can change things, yes, but they cannot delete your work. It's all still there, in the change logs of the affected profiles, and you can restore it.
I don't work much with Memories, but I believe the same thing applies: other people cannot delete any of the stories, photos, or files that you've uploaded. They can only unlink or untag profiles from those Memories.
Keep in mind, though, that just as you don't need to ask anyone's permission to make corrections, nobody else needs to ask for your permission for anything, either. None of us can claim any sort of ownership of the profiles of deceased people on FamilySearch's Family Tree. It is an open-edit communal tree with no moderation or curation of any sort. One of the drawbacks of this model is that an inexperienced user with an incomplete understanding of how this works can unfortunately mess things up pretty thoroughly -- but the system saves everything, so nothing is irrevocable.
