I have a birth certificate that has a date of birth but attached to the birth certificate is a letter from his pastor stating that the date on the birth certificate is not correct and gives the correct date of birth. Do I use the information from the birth certificate or attached letter ?

Yes. They should be close to the same date. Some researchers may prefer going with the date from the pastor's letter, others with whichever date was earliest, etc. I think for indexing purposes just choose the earliest date - the researcher can decide which they use.

Is this a batch with more than one image? Is the letter from the pastor an overlay? Is the full birth certificate shown on the next image? It would be really great to see the batch to give the most accurate answer on this one. To share your batch, provide the batch code which is the series of letters/numbers in brackets after the project title as a comment in this thread.

Is this an indexing question or is it for your family research? We can move your post to the research area if that is more appropriate!
