Keepsake Family Tree

You are referring to: https://www.familysearch.org/campaign/keepsake
Sorry all, had the link wrong - it should work now.
Unfortunately I do not see the option to change the starting person - even though that is an option in your account settings it apparently reads from your login not that Tree setting. If there are people 'missing' in 'your' tree it does give you the option to add them in - but that is different.

Understand that you would like to print a fancy pedigree. We have only one tree that is printable but if you will go to the footer (bottom of a familysearch.org page) and click on Solutions Gallery there are partners there that do fancy charts.
Here is the instructions for our print routine: https://www.familysearch.org/help/helpcenter/article/how-can-i-print-fan-charts-and-pedigree-charts-in-family-tree
Hope this meets your needs.

Is the keepsake tree available only to LDS members? I get "page not found".

The Keepsake trees should be available to all users. I also got “page not found”
There was a FamilySearch blog article (search keepsake)
At the bottom of the page there is a link to create a tree based on the information in Family Tree.

There are free programs to print with any names you wish to enter. For example, I created this one with Word Cloud. https://www.wordclouds.com/

Sister Reid, have you tried changing the starting person in your FamilySearch settings? You may ten be able to print the tree the way you want it, then go back into settings and revert to you as the starting person?
Not sure if it will work, but perhaps worth a try?
Hope you manage to print the tree you want

I love these! They are creative and attractive. I would just like to be able to put someone else as the main person and be able to give as a gift. Thanks for developing!
