I messed up
I need help. My tree had skipped a generation and was showing my 7th ggm MTNN-WTC as my 8th ggm LR99-J8V . Trying to fix this I finally ended up merging the correct profile for my 8th ggm with the 7th ggm thinking once the proper profile was in that location the information downstream would correct itself. That didn't happen as you can probably guess, my 7th ggf now doesn't have a wife and her profile can't be added since I apparently deleted it. How can I fix this?

The relationships in Family Tree can be changed around in what boils down to two basic ways: creating new relationships using one of the "Add" buttons (the plus signs), and modifying or deleting existing relationships using one of the pencil-stub-in-a-box buttons. Both of these types of buttons are in the Family Members section of a profile's Details page.
If I had a generation missing, i.e. I had 7GP with 9GM and 9GF attached as parents, but I had the correct 8GP also as one of 9GM/9GF's children, I would record the IDs for 8GP and spouse, go to 7GP's details page, and click the pencil-stub next to 7GP's name in the "Parents and Siblings" column of the Family Members section. In the resulting popup, the third section from the top is labeled Child; I would click the minus sign ("remove or replace") in that section, click in the checkbox, choose "Replace", and use the IDs to add 8GP and spouse as the new parents. This would remove 7GP from among 9GM/9GF's children, and add 8GP and spouse as 7GP's parents, all in one swell poof.

Go to the change log for Mary MTNN-WTC and "unmerge."

If I unmerge them how do I properly correct the tree? My 8th great grandmother and her ancestors will still be missing.

I got her profile back married to my 7th ggf but her grandparents are shown as her parents

Michelle,
For this situation, you might want to call and ask for assistance from FamilySearch support.
The phone # is: 1-866-406-1830. You can work with a service missionary to make the needed corrections.
Best wishes!

@Julia Szent-Györgyi's advice is solid. I might also suggest that, at that genealogical distance, you may want to double/triple check your references. It is very possible that you have some pedigree collapse at that distance. I have 6th great grandparents who are also 4th great grandparents because I descend from their oldest child on one branch and from their youngest child on another branch. Every generation further back on those lines has a double relationship, and the calculators cannot cope.

Personally, I like to mangle fell swoop into swell foop. Autocorrect is giving me a hard time about that.

(Yes, the standard Spoonerism is fell swoop -> swell foop, but "foop" is not a word, while "poof" is, and I like its zing. 🤪 )
