Correcting document, where do I put maiden name

I have found a document. But I'm not sure the transcription is right and it is causing some confusion.

Here is document

 Henry John Steinbach-Mealing, "Australia, Tasmania, Civil Registration, 1803-1933" • FamilySearch

Note that the mothers name is Knight Elizabeth Mary Steinbach-Mealing. Is this the way to put the maiden name in this document. I have looked at the document and I think it is showing the given names as Knight Elizabeth Mary Steinbach-Mealing, which properly it should be Elizabeth Mary knight I think for the mothers name. The beutiful writing is very clear "Formerly Knight".

IF this is wrong how should it look. Should I change the wifes name to Elizabeth Mary knight. Oddly this record does not have mother tag, despite others having them. And when I go to edit I could not see one, perhaps thats me. I did look at other records and I thought I a mixture of records some with the Maiden name others whith married name, as my example above Knight.E.M. as the given name. So what is right for this person.

Separate issue, Its unfortunate that the original writer of the document used the last name for the father as Steinback-Mealing because that causes some confusing also, I dont think they were ever called Steignback-Mealing, but that's another thing.

In looking at several other listings in the document you provided the link to it appears that the maiden name of the mother is typically listed following the first names and the father’s surname is not included. So. Henry John Stenback-Mealing's spouse should have been listed as Elizabeth Mary Knight. 

Also, in Family Tree the husband’s surname is typically not listed as part of the spouse's full name and only her maiden surname is included. 

I hope this explanation helps answer your question.

Thank you @Randy Philpot Please take look and see if I did it right. I find it a somewhat confusing and kludgy interface. As well Principals which I think should be the head of household often are not.

However I don't want to do it wrong.
