Jessie Gilmore nee Gregge
I have got the birth certificate of Jessie Gregg/e and Henry John Gilmore's son Henry William (b.7/8/1861 in Surry Hills, Sydney, Australia). It gives the age of Henry John as 21 born in London! (He is supposed to be the child of John Gilmore and Elizabeth Taylor - convicts - who married in 1838 in Bathurst, Australia). Jessie is said to have been 22 and also born in London. (I and the rest of the family have always thought that her parents came here before she was born.) Was there a bit of a stigma to have been born in Australia? Very odd. Any/all help appreciated.

As far as we know, there was no "stigma" attached with being born in Australia -- but perhaps the fact that a person's parents were "convicts" might have been.
We found Henry William Gilmore L6YM-N4L in Family Tree. His birth is given as 7 August 1861 at Cowra, New South Wales, Australia and his death as 1947 in New South Wales. However, there are no sources or memories attached to document this information. His wife is shown as Ellen Pascoe L6YM-NF2 and his parents are Henry John Gilmore L6Y9-J6W and Jessie Charlotte Grigg L6Y9-JXP. There are no sources for Ellen Pascoe, no sources for Jessie Charlotte Grigg and only one source attached to Henry John Gilmore: 10 Mar 1839 christening at St James Sydney, New South Wales, Australia with parents John Gilmore and Elizabeth.
Back to Henry William Gilmore. You mention you have the birth certificate. There is an entry in the Australia Birth Index for him, listing father as Henry J Gilmore and Jessie, 1861, registered at Sydney, New South Wales. The birth certificate would be a great piece of documentation to add to his record in Family Tree, proving the relationship to the parents. Do you have the marriage certificate for Henry and Ellen? That document may list their parents' names -- which would be another confirmation about parentage.
As far as Henry John Gilmore's parents - in Family Tree, they are John Gilmore L6Y9-VMJ and Elizabeth Taylor KJL6-CJ9. Both are listed as having been born in England and married in Australia -- and you are the contributor of much of the information, including the discussion note about Elizabeth Taylor, aka Eliza Johnson.
What needs sorting out is that Elizabeth Taylor has two spouses, John Poole LJKT-2RK, married 1825 in Shropshire and then the marriage to John Gilmore in 1838 in Australia. The first couple have 21 children! And, the birth years overlap that of Henry John Gilmore and the latter couple's presence in Australia. It looks like a person or persons with the same name have been combined with each other. Also, the birth places of the children are all over the map. Sources have been attached showing John and Elizabeth Pool in Maryland, United States! So, there is some reconciling to do and untangling of records.
Not sure if any of this helps you with your original question? You do have to follow whatever paper trail there is and then try to resolve conflicting information. There is a knowledge article that provides guidelines about how to untangle incorrectly "merged" records:

Thank you very much. It IS a tangle. I have always disregarded references to Elizabeth Taylor Poole (I think that they have somehow 'morphed' together) as it doesn't fit in anywhere with 'my' Elizabeth. (I am her 4 x great granddaughter.)
I have the record of convicts John Gilmore (transported for life for machine breaking) and Eliza/Elizabeth Taylor (got 7 years for stealing a sheet and a shawl) seeking and receiving permission to marry on 8/2/1838, marrying 16/3/1838 at Bathurst. Their only child was (3 x great grandfather) Henry John, born 24/1/1839, in Surry Hills, a suburb of Sydney!) John died in 1843! (Tough life?)
I can't find Jessie's origins at all. I think that that reference to her in 'Family' is a 'mix' of two people too.
I will take your advice and look up Grandma Gilmore (Ellen Pascoe) and Henry William's marriage certificate
