Somehow the order of the entries was moved so now it is given name, age, surname then sex.

It should be given name, surname, sex, then age. How do I move them back?

Canada—Border Entry Lists, 1908–1918

Click on the three vertical dots in the blue box next to Image 1 of ---

This will open a menu where you can click on Reset Field Order.

Here is a training article on How to Change the Order of Indexing Fields.
