I believe the only option is to go to the "person" screen and select "other", then choose "add information" and select "no couple relationship" .... however this doesnt remove the box under his name to add a spouse.

Short Answer: You CANNOT.

That one about "+Spouse"; and, also, the one about "+Child", will ALWAYS be there regardless if an individual/person NEVER MARRIED (or, never had or was part of a "Couple" Relationship); and/or, NEVER had any Children.
.
That is by "Design" ...
They NEVER go away ...
You CANNOT make them go away ...
.
They even appear for Infants/Children who did young (even for those that died just after birth).

The best options are:

(1) "Other Information' Section.
...... ▬ Select "+Add Information"
...... ▬ ▬ Go down the list to "Facts" _ [ You will need to do this twice ]
...... ▬ ▬ ▬ (1st) Select "No Couple Relationships" _ Add a "Reason" _ Save
...... ▬ ▬ ▬ (2nd) Select "No Children" _ Add a "Reason" _ Save
.................. [ If "No Children" is appliacble ]
