I created my personal family tree and then turned it into a family group for my father's side of the family. But I included my mother's side. How do I make private or remove my mother's side from the public tree that I'm sharing with my father's side?

Your family lines with your living relatives that you created are in your personal private space in Family Tree. You did not turn those profiles into a family group. You copied all of them into the family group, which is different space in Family Tree, where they all have different ID numbers than the profiles you originally created.

This means that for any of the profiles in the family group, such as the one on your mother's side, that you do not want there, you simply go into the family group and delete those profiles. This will have no effect on the original profiles in your personal private space.

Just make sure by checking frequently in the upper left corner of the screen that you are really in the family group before deleting a profile. Early on there was some trouble with the program flipping between the family group and a personal space without warning. I don't know if that is still a problem but it is a good idea to double check so you don't accidentally delete the wrong copy of a profile.
