Documents inaccessible
Was there a change in the document access format? All of a sudden just about every document I had now shows as "unavailable".

I too have run into this issue.
Example: Kościół rzymsko-katolicki. Parafja Ostrowo n. Gopłem (Inowrocław)
The birth records: Akta urodzeń 1805-1849 used to be viewable. Now they are not.

The website Geneteka (Polish) has direct links to specific records and the link takes you now to a page saying not available.
Even using the general search for the records with specific names and locations gives a really screwed up search result.

This has been going on for a while now and it has stopped my family research dead on its tracks.
Sometimes it says "This record is unavailable for legal reasons"

I see you are researching in Peru, based on your links.The regulations regarding access to records from Peru have recently changed, and FamilySearch must comply with these changes. A link to one of several threads on the topic:

@David66721 At the time the Peru records were restricted all records were removed to meet a deadline. In the last few weeks all records that are legally within the guidelines of the new privacy laws are being republished. https://www.familysearch.org/en/search/collection/1877097
