Some entries have more information that I can index (ex. their children and the children's birth year), but the place to index information doesn't have an option to enter that information. Is there a way I can add it?

Indexers cannot add fields to projects. That is up to project admins and the record holder.

It sounds like you're working Naturalizations. From the Important Details pop-up:

Do not create separate entries for people other than the principal person. For example, do not create separate entries for the spouse or children of the principal person.

Keep in mind that you're creating an index, not a transcription. An index is designed to make the record easier to find; it is not a replacement for the actual document (or image thereof).
