My grand father has 3 different spellings in different years of the census.

How do I record them so they are listed together in his record?

That depends on what you mean by "his record".

If you mean his FamilySearch Family Tree profile, then you can enter the variations as alternate names. You can also tag each variation with the census that it appears in.

The Help Center article on adding nicknames ("How do I add nicknames to Family Tree?") is slightly out of date (because most of the chart views now use side panels instead of popups), but it is a fairly comprehensive description of the options. The article on name entry in general ("How do I enter names in Family Tree?") has some discussion of which variant to put where.

The article on tagging sources ("How do I tag a source in Family Tree to a specific piece of information?") presupposes that the sources in question are already attached to the profile. The main article (with video) on that topic ("Using Source Linker to attach sources") is dated this summer, so it should be up to date with the new Linker's features.

On his profile page, use the Alternate Names section. If you look at the profile for Rose Barta, you will see I have recorded multiple names for her. https://www.familysearch.org/tree/person/details/GC2W-3YZ
