The marriage record for my grandmother Ethel Mary Grant born 1884 in Tor Bay, Nova Scotia shows her sex as U! What does this mean? Her six children and many grandchildren always thought she was F!

If you are looking at this index/extract of the document, it's only the index that has a U for the gender. https://www.familysearch.org/ark:/61903/1:1:DXX5-D5T2 If you look at the document, the gender is not specifically listed. Ethel Mary's condition is S for spinster - the designation for an unmarried female. The condition for her spouse is B for bachelor - the designation for an unmarried male.

many original documents may not have the gender indicated - and so an index of such records would, in theory, use something like "U" (unknown)

but that should not be interpreted to mean the person or family in question did not know their gender. LOL simply that the indexer had no indication of gender on the document indexed.
