How do I add a female to a man if they never married, but had a child together. I see where I can add the child, but it says "unknown mother" The mother is known

If you want to show the child beneath parents who were in a relationship (even if they did not marry) you have to use the "Add spouse" option. Otherwise, add the child to the father, then separately to the mother. It's your choice how you wish to place the child, but it is generally accepted that the parents are placed in a relationship in Family Tree if that does appear to be / have been the case.

Put simply, you can treat the couple as though they were married, but naturally there will be no event details to add in the Couple Relationship section.

I connect the couple as if they were married. I use the Custom Fact option to describe their relationship.
