In a record I have been indexing in the Mortgagee has the word "Consent" What does this mean and where do I put it for the Mortgagee's name or corporation identification?

According to the Field Help (purple question mark), If a corporation or organization name was not recorded or was written as a variation of the word "unknown," press Ctrl+B to mark this field blank and If the given names were not recorded or were written as a variation of the word "unknown," press Ctrl+B to mark this field blank.

"Consent" is neither the given name nor the Corporation name, so you will leave the Mortgagee information blank while indexing any other information for that record.
