When you are 'FInding a Project' you can select how many 'Batches to Check Out'

Also keep in mind the checkout limit. Most US batches are limited to 4 batches; most foreign batches have the 10 batch limit.

Also you can only index one batch at a time and as you finish one, you are automatically given the option to "choose another batch" from the same project.
