Short Answer: General, in the main, "Birth" (or, "Maiden") 'Family Name'/'Surname', for a Female.
The subsequent, "Married" 'Family Name(s)'/'Surname(s)' are recorded as "Alternate Names".

The answer is sort of "yes": enter her maiden name in the Vitals box, then add her previous married name as an alternate name under Other Information.
The second step is optional, because if you enter her previous husband, her previous married name will be pretty obvious (in most cultures that use married names), but it will make the profile easier for people to find and identify.
