On a baptisimal record I have two unidentified dates. Can I assume that the oldest is the birth date and the youngest is the baptismal date?

The oldest date on the left is the birth date, if you look at the Project Instructions and go into "What the Index", it shows you an example of having a birth date and a baptism date.
