determining date on a record

In Norway probate cards, for example: Norge—Tinglysningskort, 1640–1903 [Del C][MMHT-D5N], I have come across some that have a beginning and ending date for the probate date. There seems to be no way to reflect this. Should I use the beginning date, ending date, or neither? I have been using the end date.

Sorry, for the lateness of this response to your question.

• You are saying that in the cards you  have come across some that have a beginning and ending date for the probate date. 
• These cards bring two dates: Volume Years, and Probate year.

I am following the Example image on How to index a probate card: With he title of the card is the Volume Years, we index both years, below it and on the right side sometimes on the center of the document is the actual Probate dates(year/month/day) we also index them.

If we follow the field help for Year of probate we find the following:

Dates in these documents were usually written in a year–day–month format.  Do not confuse the probate date with other information or calculate the probate date from other information on the document.

Also; the Project instructions on dates indicates the following:

• The probate dates were usually written in the following format: YYYY DD/MM. For example, if a probate date was written as "1718 2/7," you would index Jul in the Probate Month field, 2 in the Probate Day field, and 1718 in the Probate Year field.

The General indexing guidelines regarding to multiple dates on a record indicates the following:

• If multiple dates were given for a birth, type the earliest date.
• If multiple dates were given for other events, type the most recent or latest date.
