What does it say about Rasmus Sorensen in this probate record? Is he related to the family somehow? (It was a probate for Anne Pedersdatter widow of Laurs Nielsen, her son is Jens Laursen)

Looks to me like someone is not yet mature, so Rasmus (stepfather) is probably the guardian of that person

The not yet of legal age heirs' step-father, farmer Rasmus Sørensen of Laasbye, was present and had nothing against Jens Laursen's approach.
I agree he's likely the guardian of the minor-aged heirs (plural).
