These census records name his birthplace as Ørsted.

You could start with this 1800 marriage in Ørsted to Dorthe Jensdatter that identifies a village of Hevring. https://www.sa.dk/ao-soegesider/da/billedviser?bsid=173834#173834,29246249 We see in the 1801 census, Dorthe Jensdatter 26 years old, married but husband is not listed. He may be away with the military. I'm guessing Lang is a military name for him.

There's a death record attached to Søren's page on FamilySearch; it says that Søren Jensen Lang was born in Ginnerup on 23 March 1777. I do not see him in Ginnerup on that date, though; perhaps the year is wrong. This birth place also does not match what is listed directly on his FamilySearch page; there, it says he was born in Hevring, Ørsted, Randers, Denmark (Hevring is in the parish of Ørsted in Randers)--do you know where that information comes from? And are you certain this is the death record of the person you are looking for?
You'll need to work from what you know to what you don't know. This means starting with his daughter Sidsel, for whom you have an exact birth date, birth place, and name.
An index of Sidsel's baptism is on her page, and her original baptism entry is at the bottom right of image 53 of that film (linked). Sometimes the baptismal entry will list the mother's age or other additional information, so it always helps to check the original. The record states that Søren Jensen Lang and his wife Dorthe Jensd[atter] of Heufring [Hevring, in Ørsted parish] had a daughter, Sidsel, who was born on 15 March 1807 and baptized at home on 7 May 1807.
From Sidsel, you then move back through the records, looking for all older siblings of hers. Once there are no more children, you start looking for the marriage record of her parents, starting with the birth date of the earliest legitimate child. The marriage record of the parents is likely to give additional information, such as the couple's ages and potentially their parents' names--it might even list the couple's birth places. From there, you look for Søren's birth record (follow this process for his wife as well). You then repeat the process, looking for all of his older siblings and then, once they run out, his parents' marriage record.

I think it works but this guy has been really a challenge. There is a parish named Ginnerup and also a village in Ølst named Ginnerup. I'm really hoping this one works. In the 1860 census records Ølst was named as birthplace, and other occasions Heuring, Ørsted which doesn't seem to work out. Sorry for responding late here. I have been looking at all the work you have been doing and I am wondering if there is a possibility of two Soren Jensen Langs here? Shari you are an expert- do you think there is some mixed up information because we are actually dealing with two different people? Probable?

It is certainly possible to have two men with that name. Like Charlotte said earlier it is always the best idea to work from the know back to the unknown. A review of all the sources and study with a time line, census and church records is in order.

@Gunnar John Larsen There is a "moving out" of Borup to Spentrup source attached to Søren Jensen Lang, he is 55 years old in 1837, making him born in 1782. (not 1777). BUT with that said I do find a "GOING OUT" of Spentrup so it's likely a match even if the age isn't correct.
