My grandfathers complete name I believe was George Gregory (Jorge Gregorio) and I dont know if he changed his name when he came to mexico...

That's the situation, I don't know the language and I don't even know where or how to start. My grandfather never spoke about is past, almost as if he wanted to forget his life in Kiev. I do remember him saying that his family was living near Kiev in a place called Vasylkos...? a place that was known for its fine leather products.

I would recommend first looking in family sources that you might have (journals, family papers, family histories, interview family members etc.) to see if you can find any clues about his past in Ukraine. Then the next step would be to search for records beginning with where he immigrated to - in this case, Mexico. Search for any records that would give a hint of where he came from in Ukraine - vital records, immigration, naturalization, passenger lists etc. (I'm not too familiar with Mexican research, but I'm sure the FamilySearch Wiki has some great resrouces for you!).
Records in Ukraine will be kept at the town level, likely the "Vasylkos..." that you referred to. I've just done some quick searches to see if I can find anything like that near Kiev, but haven't had much luck. We'll have to see if we can find another source that offers more of a clue
