Struggling
I've hit that brick wall (AGAIN) which we all encounter from time to time.
The bits I know, Harriett Gardener (G3PR-1PH) 3 times great grandmother, married to Uvedale Davies (MHRL-DYX) 15/08/1814, mother to my 2 times great grandfather James Davies (GPQC-ZYW).
Both Family Search and Ancestry have given me a birth of 1792 in Hope under Dinmore, Herefordshire but no more. I have quite a bit of census and birth info for children but cant find anything relating to her birth or death or even her parents. Any assistance offered would be gratefully appreciated

Census records for 1851 and 1861 give her birth place as Mansel Lacy, Herefordshire, England in around 1801. This is the same place as her husband which casts some shadow over accuracy. This begs the question of where the 1792 date came from although 1800/1801 is rather young given marriage in 1814 so perhaps 1792 is more plausible.
No deaths in the GRO for Harriet Davies in the Weobley district from 1861 to 1880 (apart from one aged 26). Of course she could have moved to live with one of her children (assuming she survived Uvedale). Have you seen Uvedale's death certificate from 1862? This will probably confirm or deny the last point. The obituary makes no mention of family.
The GRO record for the youngest child, Elizabeth Harriet Davies, confirms her maiden name (although spelt Gardiner).
Have you seen the marriage record? Might indicate a different location.
FMP has burial records for Weobleyup to 1878. No Harriet. Uvedale is not listed either.
The FMP baptisms for Herefordshire give no candidates in the time period 1790 to 1805.
Have you taken a DNA test? Obviously this is a long shot as you need to find a match with someone descended from an ancestor of hers and, even if such exists, it could be difficult to prove the specific link.
Not sure what else to suggest.

I too thought the 1801 date couldn't be right if she married Uvedale at 13/14 when he would have been 38.
The 1792 date comes from the following
and has her birth place as Hope, Shropshire.Uvedale died in 1862 age 85 which puts his birth in 1776 as correct, he's listed on the 1861 census though as aged 80 so which is wrong?
Harriett is listed on the 1861 census as still living with him aged 60, which does put her birth as 1801, which still feels weird.
Harriett is Uvedale's 2nd wife, he was married to Ann Munn in 1799 when she was 23, they had 2 children, the last one born in 1812 and if he married Harriett in 1814, Ann must have died in the 2 years in between.
Harriett's first child, James, with Uvedale was born in 1817, which is in child bearing age I suppose. This James died in 1819 and another James ( my 1 x great grandfather) was born in 1821. I have a copy of his 1871 census and Harriett isn't on it, however, I've also checked her daughters 1871 census in Birmingham and she's on it but listed as a widow, born in 1811, age 60, so is she 70 born in 1801 or even older than that.
Harriett isn't on the 1881 census so that narrows her potential death in Birmingham down a bit.

Ages given on census records are not always reliable. I have seen some wild swings from one census to another. I think it safe to say that age 60 in 1871 is wrong.
The problem with the 1792 date and location is that it is not sourced. As any genealogist will tell you, facts without sources are no more than guesses.

I get it Graham, evidence is everything, but what do you do when ANY evidence is proving elusive??

Very difficult! Keep looking. If you think you have looked everywhere, leave it and plan to revisit in a few months or so when new records might be available.
